The last example compiles here without a problem. Not sure what happens on your computer. Possibly, can you post the .lof file here? The figure captions are written into that file, perhaps the utf8 characters did not survive it.

The code has still (new) errors regarding closing braces without opening braces, and a single \end{figure}. The Unicode errors don't happen here, when I test it. So it may be an input encoding issue with TeXmaker. You could try another editor, the forum compiler here, or Overleaf, or pdflatex at the...
